I’m using an IPhone 15 pro and try to get the best settings for cloud creation.

I wonder what’s the best for me, g2o or gtsam?

They perform generally the same, though gtsam is maybe slightly more consistent. It is possible to switch approach after a scan has been created, so don't worry too much when scanning which approach you are using.
