Hi,

I don't know if MOVEIT+OMPL can be used easily with a quadcopter. For move_base, it works in 2D, so yes it would be possible to "fake" a 2D occupancy grid map for only 2D trajectories (x,y,theta). It will not plan trajectories in 3D (x,y,z,roll,pitch,yaw).
